Manchurian noodles is a delicious Indo-Chinese fusion dish that
combines the flavors of Chinese-style Manchurian sauce with stir-fried noodles.
It's a popular street food and restaurant favorite in many parts of India.
Here's a basic recipe for Manchurian noodles:
Ingredients:
For the Manchurian Sauce:
1 cup finely chopped cabbage
1/2 cup finely chopped carrots
1/2 cup finely chopped capsicum (bell pepper)
2 tablespoons finely chopped spring onions (green part)
2 tablespoons all-purpose flour (maida)
2 tablespoons cornflour (cornstarch)
1 tablespoon soy sauce
1 tablespoon tomato ketchup
1 teaspoon chili sauce (adjust to taste)
1 teaspoon minced garlic
1 teaspoon minced ginger
Salt to taste
Black pepper powder to taste
Vegetable oil for frying
For the Noodles:
200 grams noodles (any variety)
1 tablespoon vegetable oil
1 teaspoon minced garlic
1 teaspoon minced ginger
1/2 cup thinly sliced onions
1/2 cup thinly sliced capsicum (bell pepper)
2 tablespoons soy sauce
1 tablespoon chili sauce (adjust to taste)
1 tablespoon tomato ketchup
Salt to taste
Black pepper powder to taste
Chopped spring onions for garnish
Instructions:
Cook the noodles according to package instructions until al dente.
Drain and set aside.
In a mixing bowl, combine the chopped cabbage, carrots, capsicum,
spring onions, all-purpose flour, cornflour, soy sauce, tomato ketchup, chili
sauce, minced garlic, minced ginger, salt, and black pepper powder. Mix well to
form a thick batter.
Heat vegetable oil in a deep frying pan or wok over medium-high heat.
Take small portions of the vegetable mixture and shape them into small balls or
dumplings.
Carefully drop the vegetable balls into the hot oil and fry until they
turn golden brown and crispy. Remove them from the oil and drain on paper
towels to remove excess oil.
In another pan or wok, heat 1 tablespoon of vegetable oil over
medium-high heat. Add minced garlic and minced ginger, and sauté for a minute
until fragrant.
Add thinly sliced onions and capsicum (bell pepper) to the pan.
Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
Add soy sauce, chili sauce, tomato ketchup, salt, and black pepper
powder to the pan. Mix well.
Add the cooked noodles to the pan and toss with the sauce and
vegetables until everything is well combined and heated through.
Add the fried Manchurian balls to the noodles and gently toss to coat
them with the sauce.
Garnish with chopped spring onions and serve hot.

Adjust the spiciness of the sauce according to your preference by varying the
amount of chili sauce used.
