Creating a cashew brittle brownie sounds like a delicious and unique
twist on a classic dessert! Here's a recipe to make cashew brittle brownies:
Ingredients:
For the cashew brittle:
1 cup granulated sugar
1/2 cup water
1 cup cashews, roughly chopped
1 tablespoon unsalted butter
1/2 teaspoon vanilla extract
1/4 teaspoon salt
For the brownies:
1 cup unsalted butter
1 cup granulated sugar
3/4 cup cocoa powder
1/2 teaspoon salt
1 teaspoon vanilla extract
2 large eggs
1/2 cup all-purpose flour
Instructions:
Preheat your oven to 350°F (175°C). Grease and line a square baking
pan with parchment paper, leaving an overhang on the sides for easy removal.
To make the cashew brittle, in a medium saucepan, combine the
granulated sugar and water over medium heat. Stir until the sugar is dissolved.
Once the sugar is dissolved, stop stirring and allow the mixture to
come to a boil. Cook, without stirring, until it turns a light golden brown,
about 5-7 minutes.
Add the chopped cashews to the caramelized sugar mixture and stir to
coat the cashews evenly. Cook for an additional 1-2 minutes.
Remove the saucepan from the heat and quickly stir in the unsalted
butter, vanilla extract, and salt until well combined.
Pour the cashew brittle mixture onto the prepared baking pan,
spreading it out into an even layer. Allow it to cool and harden completely.
Once the cashew brittle has cooled and hardened, break it into small
pieces and set aside.
To make the brownie batter, in a microwave-safe bowl, melt the
unsalted butter. Add the granulated sugar, cocoa powder, and salt, stirring
until well combined.
Stir in the vanilla extract and eggs, one at a time, mixing well after
each addition.
Fold in the all-purpose flour until just combined. Be careful not to
overmix.
Pour half of the brownie batter into the prepared baking pan,
spreading it out into an even layer.
Sprinkle half of the cashew brittle pieces over the brownie batter.
Pour the remaining brownie batter over the cashew brittle layer,
spreading it out evenly.
Sprinkle the remaining cashew brittle pieces on top of the brownie
batter.
Bake in the preheated oven for 25-30 minutes, or until a toothpick
inserted into the center comes out with a few moist crumbs.
Allow the brownies to cool completely in the pan before slicing and
serving.
These cashew brittle brownies are rich, chocolaty, and packed with
crunchy cashew brittle pieces.
