off when you squeeze them between your fingers. Alternatively, you can use
already blanched almonds.
In a saucepan, combine the sugar and water over medium heat, stirring
until the sugar dissolves.
Add the blanched almonds to the sugar syrup and continue cooking over
medium-low heat, stirring occasionally.
Cook the mixture until it thickens and the almonds become coated with
the syrup. This may take about 10-15 minutes.
Add the lemon juice and rose water (if using), stirring to
incorporate.
Continue cooking until the syrup reaches a thick, sticky consistency
and the almonds are fully coated. Be careful not to let the syrup burn.
Once the desired consistency is reached, remove the pan from the heat
and allow the almond mixture to cool slightly.
While still warm, shape the almond mixture into small balls or flatten
it into a disc shape using your hands or a mold.
If desired, roll the shaped almond mixture in ground pistachios or
shredded coconut for extra flavor and decoration.
Allow the Almond Karabel to cool completely before serving.
