Almond brittle is a classic confectionery treat loved for its crunchy
texture and nutty flavor. Here's a simple recipe to make your own almond
brittle at home:
Ingredients:
1 cup granulated sugar
1/2 cup water
1/2 cup light corn syrup
1/4 teaspoon salt
1 cup whole almonds
1 teaspoon vanilla extract
1 tablespoon unsalted butter
1 teaspoon baking soda
Instructions:
Prepare a baking sheet by lining it with parchment paper or a silicone
baking mat. Set aside.
In a heavy-bottomed saucepan, combine the granulated sugar, water,
corn syrup, and salt. Stir over medium heat until the sugar dissolves.
Once the mixture begins to boil, add the whole almonds. Stirring
constantly, continue to cook until the mixture reaches 300°F (hard crack stage)
on a candy thermometer. This usually takes about 10-15 minutes.
Once the mixture reaches 300°F, remove the saucepan from the heat and
quickly stir in the vanilla extract, unsalted butter, and baking soda. Be
careful, as the mixture will bubble up vigorously.
Immediately pour the hot mixture onto the prepared baking sheet,
spreading it out into an even layer with a spatula.
Allow the almond brittle to cool completely at room temperature until
hardened.
Once cooled and hardened, break the almond brittle into pieces using
your hands or a kitchen mallet.
Store the almond brittle in an airtight container at room temperature
for up to two weeks.
